In line with this trend, Innova estimates that 20% of the global population has increased their fish consumption. The global seafood industry is also thriving with ready-to-eat or ready-to-eat fish dishes, meeting consumer demand for variety, quality and convenience. For example, Russian manufacturers are actively developing innovative products such as surimi balls from minced fish with various fillings and gyoza with crab meat.

43% of consumers said flavor and aroma are the most important factors influencing their decision to buy fish and seafood. The top five most popular flavors are smoked, chilli, tomato, garlic and lemon.
Choosing products that reflect tradition and culture
About 40% of consumers globally value fish products that reflect their national traditions and culture. This is a factor that has helped these products achieve an average annual growth of up to 46%.
Interest in delicacies and premium products
21% of consumers are interested in delicacies such as caviar, shellfish and premium fish. This shows that the combination of enjoying flavor and ensuring health is increasingly focused on by consumers, opening up great opportunities for premium products with high nutritional value.
